Balanced acid/residual sugar ratio, based on the characteristics of German Rieslings
Description
Our Riesling 2021 is the first harvest from our recently exposed young plantation. The harvest took place at the end of October when the grapes were very ripe, which meant that the noble rot Botrytis cinerea was already very prevalent. The grapes were then processed using whole cluster pressing.
The wine was made with a typical acid/residual sugar ratio, similar to German Rheinriesling, and is aromatically reminiscent of stone fruit and apricots.
